The fact that this place has certain cheeses making their New York City debut should tell you something. Casellula is brought to you by the former cheese-man of Chanterelle, Blue Hill at Stone Barns, and the Modern.
But instead of a cheese cart and a guy in a tux, you get a relaxed inoteca and dishes that pair each cheese with maybe their greatest companions ever imagined. We're not talking just cheese on a plate, but crostini, panini with some of the finest roast pork ass imaginable ("pork ass sandwich," verbatim from menu), and other completely delicious finger foods.
This place should be below 14th St, but we glad it's here.
